Zuccini Foccacia Bread
I found this in my "archives". I'm not sure where it originally came from, but I think it was a low-carb WLS group.
I know this is not the traditional zuccini bread, but it might be yummy. If you want to make over a traditional recipe, use half flax meal and half almond meal in place of the flour called for.
Flax Parmesean Garlic Zucchini Faccacia Bread
2 cups flax seed meal
1 Tablespoon baking powder
1 teaspoon salt
1 Tablespoon garlic powder
1/3 to 1/2 cup parmesan
4 beaten eggs
zucchini (1 medium)
1/3 cup water
1/3 cup oil
Combine dry ingredients well. Add wet ingredients and thoroughly. Let set 2 minutes to thicken a bit. Plop mixture on a pan with parchment paper (I just oiled my pan well) and sort of...form it into a rectangle depending on how thick you want it (it's foccacia remember...mine was about 6x9 maybe and a little less than an inch thick). Top with whatever you want, like cheese, fresh tomatoes, any veggies you love, olive oil…….. Bake in 350 oven for 20 min, til it springs back when you touch the top and/or is visibly browning even more than flax already is. Let it cool and slice how you want., about 12 pcs. IMPORTANT!!!
Store it in the fridge or the zucchini will go bad. This is super moist, something that does not usually happen with flax breads.
