Good morning all! Back to the ole salt mines for me. Other than that not much going on. After work I will go do a little grocery shopping. I need to make a Jello cake (white 9X13 cake then holes poked in and the liquid Jello poured over it) for one of the guys B-day. I will serve it with Cool Whip on top and fresh sugared strawberries.

Hello everyone

Well I'm at work again....of course.  I'm having system issues again.  I hate this system. 

Today after work me and a group of friends are going to see Eclipse (a Twilight movie).  We have pre-screening tickets.  So we are seeing the movie at 7pm tonight.  We are also going out to eat but, not sure where yet.  So I am very excited.  I have been waiting for this movie for a LONG time!!!!  This day will drag by.

I am having strawberries for breakfast..they're not sugared though or on a cake.  Hmmm I need to come to your work Christine.

For lunch yesterday I tried these new sanwich thins (well they're new to me.  they are really, really  thin hamburger buns.  only 22 carbs ) I really liked them.  I think today I am going to have just half of the sandwich.  Yesterday I had a whole one and it was a bit much.  I went to Whole Foods and got roast beef and cheese.  I don't know but their food just seems fresher to me.  So I am having a very tasty roast beef sandwich today.

Well I hope everyone enjoys the beautiful weather.  I know Nancy will be eating outside today...hahaha  Bye.

Good Morning, another nice sunny day.

Yesterday I painted the wrought iron columns on the front porch. Today, I want to work on the backyard. We will see what gets done.We als want to finalize the hotel plans for our Washington D.C. vacation.

Crystal, you are lucky you can eat sandwiches. I still can't eat that much bread at one time.I love roastbeef and swiss cheese. So I will usally make a rollup with a bit of mustard and a pickle spear (thin cut).

Christine, I was thinking of the jello cake for the weekend. But decided on a 6 layer cake, with red, white and blue layers.

Good morning Chris and the rest of Illinois!

I am working today and tomorrow, then off for at least 6 days.  I was just thinking that our porch needs a new paint job.  Maybe we should do that with the other half of our vacation?  I will see what Todd says.

That's about as exciting as I can be at the moment.

Good mornin',

Listing to jazz online this morning and having a lot of funny thoughts.  In a strangely good mood so I better look out for the steam roller.  Love this weather.  Pepper plants are budding.  Well two are.

Somewhere along the line my BMI slid under 50. Wahoo.

Chris, it is hard to get back to the salt mines, but unfortunately, we all must do that.  Hang in there.  

Crystal, you are right on the money.  I ate lunch outside and it was soooo hard to go back inside afterward.  The weather was absolutely beautiful!  I have my windows open and the cats and I are enjoying all the fresh air!  

Lisa, it sure must be nice to have the time to do all of those projects -- and at your own pace.  

Dawn, I hope you have a wonderful vacation.  

Randy, stay in that good mood.  It is contagious!

Today, I tackled learning new things and jumping in feet first on new projects at work.  Just took a deep breath and dived in.  I am beginning to wonder how crazy I am but as long as I have the time just focusing on team accounts I am going to take advantage of learning.  I know that will change.  Right now, I dont have to worry about the length of time it takes me to do anything.  Once we are no longer considered "new" the clock starts kicking on each call and we have to meet expectations.  Yikes!

Well my first day back was busy, busy Busy. I work for AAA, what do you think people do before a 3 day weekend. They call to make sure they have their road side membership paid up, or they call to make sure their insurance is paid up. So everyone and their brother must be going out of town this weekend. I'm staying at home. Well some where close to home any way.

Everyone was glad to see me. Thousands of questions I was basically mobbed with questions. They acted like they never seen me before.  Other than that I had a good day. I'm tired an will be going to bed early.

I cant' get ahold of Jackie, I keep on getting her voice mail. Hope she sleeps well tonight!

Have you ever made Jello cake? It is real easy.

One white cake mix, I used Betty Crocker Super Moist, follow directions to mix and bake, let cool. YOU HAVE TO USE A BOX MIX AS THE FROM SCRATCH RECIPES ARE TOO MOIST AND THE CAKE WILL FALL APART WHEN CUTTING IT.

1 small package of your flavor Jello. I used strawberry because I am going to sugar fresh strawberries for going on top.

Sugared strawberries for on top. Your choice as to how much to buy. And you can use Splenda to sugar also.

After the cake is cool you poke holes in the top of the cake. I used the smallest diameter wooden spoon. Do not poke all the way down. There isn't any certain amount of holes to poke in the top. You can use a fork for smaller holes but you have to make sure that you do not get them too close or the cake will fall apart when cutting later on.

Cook the small package of Jello (regular or sugar free, your choice) according to directions and pour the liquid over the "hole poked cake". Put in the fridge overnight.

Just before you are going to serve it spread cool whip that has been softened on top. I usually lay it on pretty thick to cover up the holes from the spoon or fork. Cut into squares for serving. You can spoon sugared berries on the top.

Use your imagination as to the decorating. You can make it an American flag with various berries or put a heart shape in the center with berries, flattened gum drops for St Patties Day cake with lime Jello, or lemon gum drops with lemon jello . . .

I will have to remember this. I haven't tried eating any cake yet.  But when I do I can see how this one would be easy to do plus not that many calories.  Hmmm, still sounds yummy!
