R.O.D.- Spaghetti Sqash Carbonara

Spaghetti Squash "Carbonara" 
Serves: 8 (1 Serving = 1/2 Cup)  
1 spaghetti squash (approx 1.5 lbs.)
2 cups chicken, cooked and cubed (could use canned)
6 strips bacon, cooked crisp, drained and crumbled 
1/4 cup fat-free evaporated milk 
1/4 cup egg substitute (or 1 egg, beaten)
2 tablespoons Parmesan cheese , grated
1/2 teaspoon salt 
1/8 teaspoon white pepper
Pinch of ground nutmeg  
Cut squash in half and scoop out seeds.  Place cut side down in pie plate with 2 Tbs. water.  Microwave on high for 15-20 minutes or until soft.  (Alternative:  Preheat the oven to 350 degrees F. Pierce the squash in several places with a fork. Place on a cookie sheet and bake for 50 to 60 mins or until soft.)
Remove from the oven and let stand for 5 mins.   
Using a fork shred the squash strands into a bowl.  Add chicken. 
Mix remaining ingredients and add to the squash & chicken.  Toss and serve immediately.
