R.O.D.-Orange-Yogurt Muffins

I have some extra time today, so I was cruising around, looking for recipes.  This one sounds great for a Springtime breakfast or Brunch.  It is based on a recipe I found in Home Made Simple, but I changed the sugar to Splenda, the oil to unsweetened applesauce, and the marmelade to Sugar Free.  These simple changes made a much healthier muffin, even though theirs was already marked as "low fat".

The stats look even better if you think of making them in mini muffin pans and/or the fact that WLSers usuall only eat 1/2 of a serving.


Orange-Yogurt Muffins with Marmalade Glaze 
Moist, fluffy and brimming with bright, tart flavor, these low-fat muffins taste just like spring. Top each with an easy-to-make marmalade glaze that adds a sparkly sheen and even more fruity flavor.

Makes 12
Prep time: 10 minutes
Cook time: 18-20 minutes

INGREDIENTS
1 cup plain yogurt (Fage 2% is used in my nutritional calculations)
1 cup Splenda No Calorie Sweetner
3 eggs
1 teaspoon almond extract
1 teaspoon vanilla extract
1/2 cup unsweetened applesauce
1 1/2 cups all-purpose flour
2 teaspoons baking powder
1/4 teaspoon salt
1/2 cup Sugar Free orange marmalade (for Marmalade Glaze)
1 teaspoon water (for Marmalade Glaze)

Tip: If you don’t have orange marmalade on hand, try using orange jam, jelly or preserves.

INSTRUCTIONS

1.       Preheat oven to 350°F. Line a muffin pan with 12 paper muffin cups. In a medium-size bowl, mix together eggs, yogurt, Splenda, almond extract, vanilla extract and applesauce on medium-high speed.

2.       In another bowl, combine flour, baking powder and salt. Add dry ingredients to yogurt mixture, stirring until well combined. Divide batter equally between the muffin cups.

3.       Bake in oven 18-20 minutes until lightly golden brown and an inserted toothpick comes out clean. Let cool 5 minutes.

4.       Remove muffins from pan. To make glaze, combine marmalade and water in a microwave-safe bowl. Heat on high power for 1 minute, then stir well. Brush each warm muffin with marmalade, let cool and serve.
