Morning everyone!
Yay another day of sunshine!
Today is the Scouts Pinewood Derby. We are getting everything together to go over to the school and start setting up. Hubby decorated the cake last night, looks very cool!
Other than that I am making pigs in a blanket for dinner. Round steak wrapped around a slice of onion and bacon cooked in the crock pot all day. YUM!

I use low sodium beef broth and pour that into the crock pot. I cut the round steak into 1 in wide strips and then wrap it over a slice of bacon and a sliver of onion and secure it with tooth picks. I do a quick browning of the outsides of the rolls in the skillet and then pop them into the crock and set it at low for at least 6 hours.

I had a good/bad day yesterday.
I did my presentation in the morning and it went great! I was at McCormick Place for an early childhood education conference.
Then, last night I had an awful bought of head hunger that I gave into. I'm starting over today.
I'm doing some running around today. Going hit Borders, grocery store and JoAnn's.

Morning, everyone,
We're planning on taking a ride to Starved Rock to look at the eagles this afternoon. Got to take advantage of this sunshine! Crossing my fingers I get a call tomorrow from the surgeons office with a date, it is so hard being patient! I think I'll do the pot roast in the crock pot tomorrow. Sounds good. Have a great day!
