Suggestions for Lunch
Have you posted this on the DS forum yet? That group is full of good recipes and ideas. Try Lori Black's profile, too. I think she posted everything she ate the first few months out.
You are still "early out" in my world for much in the way of carbs and general "dense" food, so how about high-protein ideas like:
lunchmeat wrapped in cheese or a cheesestick wrapped in lunchmeat
tomato soup with tons of cheese melted in it
cheese and low-carb crackers of any kind
low-carb bread on a sandwich of your choosing (I like grilled cheese with bacon)
thin-crust pizza or crustless pizza
chicken or tuna salad
quiche (you can do crustless)
hot dogs
eggs and bacon/sausage
chili (Wendy's is usually good for that)
burritos and soft tacos (Chipotle is good)
shrimp
any fast food without the bun (these days I eat a Big Mac without the middle bun--my concession to being low-carb, LOL)
steamed edamame with salt
pasta (only if it's Dreamfield's or whole wheat) with some meat sauce
meatballs with or without sauce (frozen kind works fine)
ricotta fluff (Val on the DS board swears by it and has the recipe on her profile)
I had a friend who loved to melt a mozzarella cheese stick on a plate and toss some spaghetti sauce on it in those early days. She said it was her "lasagna."
I love salads, but not sure if your tummy is up for it yet. I do high-protein salads with tons of cheese, dressing, bacon, sunflower seeds, chicken, etc.
Not sure if your tummy is up for it, but how about nuts, trail mix, etc. Easy to take with you.
The sky's the limit on choices. Remember the DS food plan: eat frequent high protein, low-carb meals/snacks and don't worry so much about the fat since you malabsorb about 80% of it.

What Nicolle said.......I have a recipe for the fluff, but it will have to wait until I got to work (tomorrow) if you need it.
Cottage cheese is great.
Ricotta with spaghetti sauce is also great.
Ricotta with sugar free syrup is good as a "dessert" kind of thing if you need something sweet.
I have a recipe for MIMs and PIMs, which are muffins and pancakes made from protein and flax. they can be made in endless ways and are very good.
