R.O.D.-Onion & Bacon Gratin

This is Amber's favorite Thanksgiving dish:

Onion and Bacon Gratin                   425 degrees   casserole dish

 

            3 Tbs. butter (divided)

            3 large yellow onions

            ¼ lb. thick sliced bacon-cut into ¾ in. pieces

            Kosher salt and freshly ground black pepper

            1 crushed clove of garlic

            ¼ c. freshly ground parmesan cheese

            ¼ c. freshly ground Gruyere or Asiago cheese

            ½ c. bread crumbs (I grind up croutons)

            ½ c. heavy (whipping) cream

 

In large sauté pan, melt 1 Tbs. butter over medium-high heat.  Add most of the sliced yellow onions and bacon and coo****il the onions are quite soft-15-20 minutes.  Transfer to colander to drain.

 

Rub the bottom and sides of casserole dish with crushed garlic.  Scatter cooked, sliced onions and bacon on bottom and season with salt and pepper.  Sprinkle the grated cheeses evenly over the onions, then bread crumbs over the top.  Dot with last 1 Tbs. of butter.  Pour cream along the edges.

 

Bake until golden and the cream is absorbed, about 25 minutes.

 

Serves 8.
