quinoa
Have any of you tried Quinoa (keen-wa)????
This is a high protein, no gluten, grain-type thing that can be used in place of rice as a side dish. I had been reading about it and finally found some to try. There are 6 g of protein in each 1/4 cup, at 170 calories.
I really like it! I rinsed it first thouroughly, then toasted the grains.
It cooks just like rice---2 cups water to 1 cup quinoa. I used about half beef stock. Pour quinoa into boiling water, stir. Bring to a boil, then lower to simmer, cover and cook for 20 minutes or until all water is absorbed. It was very good.
THEN, I got fancy and decided to make it into a salad with olive oil, lime juice, snow peas, artichoke hearts, salt & pepper. It is still good, but we liked it better before I added stuff.
I will be using this again and thought I'd let you in on it. It did not give me the "hard rock" feeling in my pouch that I get from pasta and rice.

Dawn, I did not know that the grain was so versatile. I really thought it only was in a ground form or in a ready made bread form. Thank you also for the pronunciation as I did not know how to say it. I will try and remember to give it a whirl.
I for many years was looking for alternatives due to a gluten intolerance pre op. Now that I am PO I eat wheat but naturally not in the quantities that I did before. I still have "issues" in the poopie dept because of my microscopic colitis (which I believe that I have an intolerance to wheat and other grains) but my gastro is not on board in that respect. Oh well, my cross I guess . . .
