R.O.D.-Vegetable Tofu Scramble

With all this talk about tofu, then I get this recipe from SparkPeople.com in my email this morning:  I might just get some tofu and try it.  If you all try it first, let us know how it is.

Vegetable Tofu Scrambler
Serves: 3
Serving Size: 4 oz.

Tofu is high in protein and calcium, low in fat and sodium, and cholesterol-free. Reprinted with permission from HOW IT ALL VEGAN! by Tanya Barnard and Sarah Kramer (www.GoVegan.net), Arsenal Pulp Press.

INGREDIENTS
1/2 medium onion
4 - 5 mushrooms, sliced
splash of olive oil
1 (12-ounce) pkg firm tofu, crumbled
1-2 tsp curry powder
pepper (to taste)
salsa (to taste)
2 stalks green onions, chopped

DIRECTIONS
1. In a large saucepan, add the onions and mushrooms to a splash of oil and saute on medium-high heat until the onions are translucent.

2. Crumble tofu and add to saucepan.

3. Add the curry and pepper.

4. Sauté 10-12 minutes until moisture has evaporated.

5. Add salsa and green onions and scramble on high heat for 2 to 4 minutes.

Note: you could also add any other veggies you have kicking around.

I've been wanting to try tofu for a while now, I just didn't know what to do with it. This sounds pretty good and I think I am going to try it. Thanks for the recipe

I would try it too, but I am afraid of veggies right now.

I have eaten some steamed broc. and cauliflower, but no onions.

I am exactly 6 weeks out today.

I can't wait until my Doctor's appointment. I feel I have lost some more weight, but don't know.

Feb. 20th. I get my 2nd follow up. Can't wait.

I have been frying my tofu. I even put a little in my turkey meatloaf the other day. It turned out pretty good.

I do have a recipe I invented. It turned out pretty good.

I took about a 1/4cup of turkey meatloaf. I flaked it all apart so it is kinda like ground beef.

Then I took about a spoonfull of spinich out of a can. (Its mushy so it doesn't scare me.)

Then a spoon full of cottage cheese and dumpped some spagetti sauce in it.

Mixed it all up and heated it in the microwave.

So it is like Lasagna without the noodles.

I ate about a cup of it.

Man it is good. I love it.

I had been getting so sick of eating fish, turkey, and chicken that I was going to kill something. (Not a chicken, fish, or turkey either.)
