R.O.D.-Basic Cheesecake Filling

Joy mentioned the other day that she had a week left on pureed, so I thought I would post this for her, and everyone else that likes cheesecake------

Basic "Cheesecake" Filling

1 cup low fat cream cheese (fat free if you like it)
1 cup part skim milk ricotta cheese
1 large box Jello sugar free pudding mix, or 2 small boxes--any flavor you wish (one cheesecake, one white chocolate?  YUM!)

1 cup skim milk
2 scoops protein powder that will enhance/match the flavor of the pudding


Mix this altogether well with a hand mixer.

 

6 servings at 1/2 cup each (can eat any time after being advanced to full fluids/pureed)
194 calories
12.8g fat
 6g carb
16.8g protein

 

Tips and tricks:
When adding your liquid, watch that you don't add too much because you can go from cheesecake to a fluffy type consistency easily.  

 

 

For a family dessert, pour this into a graham cracker crumb crust or chocolate crumb crust--just the cheap ones from Wal-mart are less than $1.  They are only 6 gm sugar/serving.

 

You could add a layer of Cool Whip to the top and/or some fruit.

 

You can make this chocolate, add some peanut butter to crushed graham crackers instead of butter. Warm the PB a little to help it mix better--and this is like a peanut buttercup.

 

You could also crush Kashi “Go Lean" cereal for the crumb crust.

Hi Kelli!
I have been thinking of you and wondering how you are doing.  Are you feeling back to "normal" yet?  Congrats on the first 36 pounds....more to come, for sure.

As far as this recipe goes, yes, it is "no bake".  Just mix and eat.  For myself, I would split it up into indivudual serving dishes so they would be ready when I am.
