Good Morning Illinois!

Today is another storytime at the library for Meredith and then back home to make jambalaya for Liz.  She's really enjoying the cooking that I am now doing.  I enjoy it too, I only wish I could eat some.  Last night I made pan pizza, but could barely handle 1/2 a piece.  I talked to the school yesterday and I am set to start on Feb. 10th.  I'm really looking forward to it.  I will need to drive the kids to Liz's work everyday at 5pm since we can't afford to pay someone to come and watch them every day.  It should work out okay, I just hate to make the kids go out for 2 hours every afternoon.  Once I get work, I'll get some help.  I'm glad that our area will be spared the snow.  I would be happy to go to Spring now!  Everybody stay warm and enjoy this Tuesday!

Good morning Dave and Illinois!

Not much happening around here........I suppose I could do another load of laundry.....Sunday my daughter is having a Velveeta Cheese Superbowl House Party at my house. She belongs to houseparty.com and they provide you with a few things for your gathering. Since my house is bigger she's invited a few people over and we will watch the game.
Should be fun!

Good Morning Illinois,

Wish I could remember all I just read in the posts.   I guess since I am thinking of Carla, not  much sunk in.  Please know I do wish the best for all of you whatever you are dealing with.

Dropped Cheyanne off at school this am, Sami doesn't have school today so I am home till 2:30 when it's time to pick up Cheyanne.  Have to locate the tub of Valentines stuff today.  Can;t figure out where I put it.  Earl said he looked in the attic before his surgery and didn;t see it, but I am sure it is up there, since I can;t find it here anywhere.  So I'll go up there and look, I bet it got pushed behind the Christmas tubs when Jen put them up for me.  I also need to start working on Income Tax for us, my mom, Earl's mom, our daughter and anyone else that adds their name to the list. ( Everyone in our family and some friends think since I used to work for H&R Block years ago, it is easier for me, even thought the tax laws change all the time, maybe I should start charging them a fee)  You think soon to be ex-SIL will ask me to do his??? hmmm...  I think I need to learn the word "'NO", maybe then I could do what I want/need to do for me.  Ok, I vented  (Sorry)  maybe now the day will be easier to face

Doing great today.  Dropped off DS at daycare and have already set up my Anti-Bullying Grant Intern with enough stuff to keep her busy until lunch!

Plenty of people sick at work- I hope I don't get sick.  I really can't take off work...I have to save for summer vaca!

Just checking in to say hello, I've been searching for different ways to cook pork chops, fried chops, mashed potatoes and gravy have been banned in this house, oh well! My family is very supportive so they are fine with it.  This way of eating is confusing to me. The Dr wants very low carbs, I've been on many diets and it was always calories to watch.  Vegetables were the main items I liked . Now protein and water I think about. 10 grams of carbs is such a small amount.   I hope I'm doing this right. I don't miss desserts at all, I;d just love to have vegies.

You are right!  10 g of carbs IS very small.
The good news is that lots of veggies are low carb.  Here is the list from Atkins (master of low carb):
1 cup is aproximately the size of a base ball, so you probably can't eat a whole cup yet, unless you chew it to death.

Thanks Dawn , This helps.  Do you know about  edamane, they look  like snow peas  but I don't know how they are prepared to eat.

Hi Norma:

I LOVE edamame, but I have not seen them raw.  I have them shelled and frozen from Trader Joe's (although I have seen them in other stores too).  The package I have says:
1/2 cup is a serving
120 calories; 5 g fat; net carbs 3 g (total of 8 less 5 for fiber); 10 g protein.

To cook these shelled edamame, you just add the package to 4 cups of boiling water with 1 tsp. salt, bring back to a boil and boil 5 minutes.  They are awesome salted as a snack.  They can also be added to salads, soups, stir fry or casseroles.

I think I will cook them now!

You know I'm such a picky eater, there isn't one thing on your list I will eat.  I pretty much hate veggies.  I will eat green beans or lettuce if I have to.  I wish I would like veggies more.

If you are going to read a Dr. Atkins New Diet Revolution I would recommend getting the one copyrighted in the early 90s as it uses lower carbs than the newer one.
