R.O.D-Baked Oatmeal
BAKED OATMEAL 'CUSTARD' WITH BLUEBERRIES
Vegetable Cooking Spray
1 cup + 2 tablespoons old-fashioned oats
1/4 cup Splenda granular
2 tablespoons sugar-free maple syrup
1 2/3 cup milk (or skim evaporated milk)
1 egg
1 teaspoon vanilla
Pinch of salt
1 cup fresh or frozen blueberries (or other berries)
Topping:
3 tablespoons Splenda granular
1/2 teaspoon cinnamon
Preheat oven to 350 degrees. Grease an 8x8 inch casserole with cooking spray and set aside.
In a medium bowl stir together the oats, Splenda, maple syrup, milk, egg, vanilla, salt, and berries. Pour into prepared baking dish. Bake for 25 minutes. Remove from oven and set dial to BROIL. Sprinkle the 3 tablespoons Splenda and the cinnamon over the baked oatmeal and return to the oven. Broil for 2-3 minutes or until bubbly and golden. Serve with yogurt or cream. Makes 6 servings.

I ALWAYS mix protein into my oatmeal, otherwise, it is not worth spending "pouch space".
Just dish up your serving, heat it up and add a scoop of your favorite protein before eating. As long as the oatmeal is not boiling hot, it should not "cook" the protein.
I LOVE IDS Multi Whey Vanilla-cinnamon flavor mixed into oatmeal, and their banana is good too. I get my protein at www.bodybuilding.com. They have a HUGE variety and the best prices.
Really though, any vanilla protein and cinnamon are good. I have also heard that pineapple flavoring is good in oatmeal, but I have never tried it.
I suppose you could get creative with sugar free syrups, or add a couple of tablespoons of pumpkin.......
