R.O.D.-Cheesy Ham & Egg Bake
Looking for a brunch idea for the whole family? Here's something good and comforting in this cold weather:
CHEESY EGG & HAM BAKE
6 eggs, beaten
1/4 cup flour
1 teaspoon baking powder
1/8 teaspoon salt
1/8 teaspoon pepper
1/2 teaspoon Italian seasoning
1 cup milk
1 cup cottage cheese
4 ounces cream cheese cubed
1 cup cubed sharp cheddar
1/2 cup ham, diced
In a large bowl, beat the eggs until frothy. Whisk in flour, baking powder, salt, pepper, seasoning, milk, and cottage cheese. Stir in cubed cheeses and ham. Pour into greased 9x9 inch pan. Bake at 350 degrees for 30-35 minutes or until puffed, golden and set. Makes ten servings. (Could easily be cut in half for smaller families....)
