Here is the original recipe for the MIM and some tasty new combinations:

I can not eat a whole one of these at a sitting, they are very filling.  I omit the cinnamon and Splenda and use as bread for an egg sandwich----YUMMY!  If you prefer a more savory bread, skip the Splenda and cinnamon and try italian seasonings ( or rosemary) and garlic!

Minute Muffins

Take the small mixer cup that came with the Magic Bullet and add:
(If you don't have a Magic Bullet, a coffee mug or ramekin will do the same thing, just make sure to mix thouroughly.)

1/4 cup flax meal (grind ½ c seeds  in bullet)
1/2 tsp. baking powder
1 or 2 packets of splenda (and/or a shot of SF cinnamon syrup)
1 teas cinnamon
1 large egg

Mix in the Bullet for about 5 seconds (make sure well blended)
Microwave for 1 minute! (in the same cup)

If you want you can add 2 T of cream cheese to the mixture (plopped in the middle, it manages to stay in the muffin and ooze out when you eat it!)

While warm spread with some butter, cream cheese or SF jelly (watch the
carbs in the jelly)

I usually add 1 tsp. vegetable oil and that adds 40 calories.

 

Chocolate/Walnut: (like a brownie)

 

About 1/4 cup flax seed meal,

1 egg
1/2 tsp. baking powder
rounded tablespoon of plain greek yogurt,

heaping tablespoon of dark chocolate cocoa powder 
approx. 2 teaspoons Splenda,

a handful of chopped walnuts,

and a shake of mini-chocolate chips (sugar free if ya got 'em).

 

Microwave for 75 seconds and let it stand for a minute.  

 

Banana Bread MIM

1 scoop Banana Protein Powder
1/4 Flaxseed meal
1 large egg
1/2 teas. Baking powder
1/4 teas. Banana extract
1/8 vanilla (optional) (This morning, I was out, so I used S/F caramel syrup)
Crushed Walnuts to taste (approx. 1 Tbsp)
3-4 drops of liquid Splenda or equivalent of dry Splenda (maybe 2 T)
1T oil (you can actually add a bit more to add more moisture if you desire)
Splash of water so mixable

Nuke in Ramekin (or Magic Bullet cup/coffee cup) 1.5 minute. Bread consistency and tasted outstanding!

Cranberry MIM
1/4 c flax meal
1 large egg (or equiv. Egg Beaters)
1/2 tsp baking powder
splenda to taste
about 1/2 Tbsp sf peach flavoring (to taste)
1 Tbsp sliced frozen cranberries (to taste)
1 Tbsp cream cheese (dropped in the middle after all the rest is mixed)

Mix with fork in mug. Drop cream cheese in middle. Cook 1 1/2 minutes in
microwave.
