I found the original recipe on DaVinci's site, but I re-made it to be more appropriate.  I think we could add a couple of scoops of vanilla or unflavored protein powder before putting in the ice cream machine to make this a protein treat.

Now that I think of it, we could use any flavor of sugar free syrup----Raspberry, Kahlua, Irish Cream, Chocolate, Pumpkin Pie...........mmmmmmm

 

5 Tbs DaVinci Gourmet Caramel Sugar Free Syrup

2 Cups vanilla soy milk

7 eggs

1 Cup Splenda No Calorie Sweetener

 

Pour half & half in a pot and heat on medium until simmering. Remove. Separate eggs. Whisk yolks and add to half & half. Place back on the stove for 3 minutes stirring constantly. Remove when it starts to thicken. Beat egg whites till soft peaks. Let the half & half and yolks cool for about 5 minutes and add Splenda, syrup and cream. Fold in whites. Refrigerate for 3-4 hours. Put in ice cream machine.

Calories 97; Calories from fat 52; Total fat 5.8 g; Saturated Fat 1.8 g;  Cholesteral  217 mg;  Sodium 72 mg;  Carbs  4.5 g;  Protein  7.8g

This sounds so yummy....but Earl & I don't do eggs anymore,  just eggbeaters.......I think I saw just egg whites at Jewel by the eggbeaters....do you think that combo may work??  Maybe I'll try it making half a batch....

Surely it can't hurt to try it.  It would lower the cholesteral too.
