R.O.D.-Italian Surprise
So, Eileen knows the joy of adding cottage cheese to spaghetti, but had anyone else tried it?
I can not eat pasta, apparently at all (feels like a big, hard rock) but her suggestion of using spaghetti squash is right on. I did not have any squash, but this is what I had for dinner last night and am going to have for lunch today. I didn't even miss the noodles!
Italian sausage, browned
Spaghetti sauce (your favorite kind, mine was whipped up from fresh tomatoes and herbs)
Cottage Cheese (lowfat)
Parmesan cheese
**optional--mozzerella**
I had about 1/4 c of the sausage, 1/4 c. cottage cheese, a few spoonfulls of the sauce and a tablespoon or so of the parmesan. I just mixed this all up in a bowl. If I would of had mozzerella, I would have put a couple of tablespoons on top and melted it in the microwave. It was very similar to lasagne and could be a good substitute for pizza.

You can always add any other favorite toppings like mushrooms, peppers, peperoni, etc........
