R.O.D.-Raspberry Lime Dipping Sauce
I was thinking about this on my way in to work, and I'd bet this would make an AWSOME fruit salad dressing, instead of just a dip.........
Raspberry Lime Dipping Sauce for Fruit
1 c. raspberries
1 lime
1 ½ c. 2% Greek Yogurt
¼ c. Brown Sugar Twin
Puree raspberries in blender or bullet. (If seeds bother you, place raspberries in mesh colander over a bowl. Mash and press the raspberries through colander and discard seeds----although I would puree them for the extra fiber.)
Grate 1 tsp. of lime peel and squeeze 1 Tbsp. juice.---mix in with the raspberries.
Stir in yogurt and Sugar Twin.
Serve with fresh fruit such as strawberries, grapes, peaches, nectarines, cantaloupe, kiwi……
If not serving right away, refrigerate for 1-2 days.
The origianl recipe called for regular brown suger and here is how the nutrition facts read: (with regular brown sugar)
Calories 57; fat 1 g; carbs 10 g; fiber 1 g (without seeds); sodium 14 mg
I tried to put it into “Calorie-count.com” but it did not recognize the Brown Sugar Twin or Greek yogurt, so I could not get an updated nutrition count. 6-24-08
