WL friendly Broccoli Salad

Hi everyone. Here  is the recipe for the Broccoli Salad I brought to Christina's.  Thank you Dawn for the help in slimming it down.   Broccoli Salad- 8  servings (1 cup) ** 1 pound Broccoli, cleaned and trimmed, cut into bite sized pieces(I trim the tougher outer part of the stalks off and cut the softer inside up) 1/4 cup Slivered Almonds;1/2 cup Raisins; 2 strips Turkey Bacon,fried crisp and crumbled, Mix together. In a bowl whisk together 1/2 cup reduced fat mayonnaise, 1 tsp. Vinegar; 3 tsp Splenda and 1/8 tsp pepper. Pour over broccoli mixture; mix well and refrigerate at least 1 hour.  Calories 98 -  Total Fat 4.4gr - Cholesterol 20 mg - Sodium 170mg - Total Carbs 14.1g  - Protein 3gr.-- Dietary Fiber 2.2 gr-  Sugar 8.4 gr.  I used www.calorie-count.com  to get the nutrition information.    Paulette

This was excellant! The raisins, turkey bacon and the dressing mixins really tamed down the powerful taste of the broccoli. Dave is regretting that he did not try it but he was so full that he could not put another small bite in him. Chris

Dawn & I were talking about the recipe and I think next time I make it I may cut down the raisins a little and either increase the almonds or try adding sunflower seeds.  I'll have to check the cals & carbs of course for me first, but with more nuts it would increase the protein.  I make this alot during the summer for family get togethers and just about everyone loves it even the kids.  It was great to meet you & Dave yesterday. I hope someday I'll have before and after pics like yours.  Paulette
