R.O.D.-Raspberry Gelatin Dessert
I got this one from the "Taste of Home Healthy Cooking" magazine and it looks to be excellent. I may even make it for Saturday to have a choice besides the birthday cake.
I have found this magazine to be pretty good. They do a ton of "makeovers" and have lots of recipes that are easy to makeover even more to "our" specifications.
You could even get creative with different flavors.....peach for instance.
Raspberry Gelatin Dessert
(Bonnie Osthimer, S. Bend, IN)
8 servings in 8 in. x 8 in. pan (can easily be doubled for a 13 x 9 pan)
1 pkg. (.3 oz) sugar free raspberry gelatin
1 c. boiling water
1 pkg (.8 oz) sugar free cook-and-serve vanilla pudding mix (NOT instant)
1 c. cold water
1 pkg (12 oz) frozen unsweetened raspberries
In large bowl, dissolve gelatin in boiling water. Set aside.
In small saucepan, combine the pudding mix, cold water and raspberries. Bring to a boil over medium heat, stirring constantly. Cook and stir 1-2 minutes longer, until thickened.
Remove from heat, stir in reserved gelatin mixture.
Pour into 8 x 8 square dish coated with cooking spray.
Cover and refrigerate for 8 hours or overnight.
Calories 33; Fat, trace; cholesterol 0 mg; sodium 78 mg; carbs 6 g; fiber 1 g; protein 1 g.

Now......I am always looking for ways to add protein, so I am thinking of adding a block (8 oz) of low fat (Neufchatel) cream cheese. If I did that, the stats would change like this:
Calories 107; Fat, 6.6; cholesterol 22 mg; sodium 191 mg; carbs 6.8 g; fiber 1 g; protein 3.8 g.
You need to decide if the added protein is worth the added calories.
Would a couple of scoops of vanilla or unflavored protein powder work better? mmmmmmmm? I will experiment and report back.
