tried this recipie last night and HAD to share!
its for a turkey meatloaf. it was DELICIOUS!!! here's the recipie word for word:
INGREDIENTS
- 2 pounds ground turkey
- 1 cup milk
- 1 cup Italian seasoned bread crumbs
- 2 eggs
- 1 teaspoon salt
- 1/4 teaspoon pepper
- 3/4 pound Colby cheese, cut into 1/2-inch cubes
- 1/2 cup ketchup (optional)
DIRECTIONS
- Preheat oven to 400 degrees F (200 degrees C).
- In a bowl, mix the turkey, milk, bread crumbs, and eggs by hand. Season with salt and pepper. Fold the cheese cubes into the mixture. Transfer to a loaf pan, and top with ketchup.
- Bake 1 hour in the preheated oven, to an internal temperature of 180 degrees F (85 degrees C).
i modified it a bit. i only had 1 pound of ground turkey so i halved it all. Used egg beaters instead of regular eggs and reduced fat cheddar & monterrey jack (all i had). i also used shredded instead of cubed. i also used whole wheat bread crumbs and added about a teaspoon of garlic & onion powder and didn't put any ketchup on the top. cook it at 375 for 50 mins and it was perfect and oh so moist! even my super picky kids ate it! my 2 year old asked for seconds and i didn't have to fight with my almost 4 year old to eat it (once i convinced her to take a bit of course) =)
