Bacon Cheeseburger Pie to Die for!
I know Dawn shares her ROD, and I don't want to step on any toes, but I had to share this recipe! I found this recipe last year on a South Beach Diet website and my 11 year old son LOVES it! He even requested it for dinner tonight, I thought I'd share it with you... it's super easy and SO good!
Bacon Cheeseburger Pie
1lb ground turkey- cooked and drained (or very lean hamburger)
4 strips of turkey bacon, fried till crisp and chopped or broken (I microwave mine)
small onion-chopped
4oz bag of shredded cheddar cheese
1/4 Cup of Mayo
3 eggs
salt
pepper
2 cloves of chopped garlic
Preheat oven to 350°F.
Brown turkey in skillet with onion, salt, pepper and garlic. Remove and mix in bowl with bacon pieces, breaking up any larger clumps with a fork or pastry mixer until you have a fine mix. Drain well of any excess grease and press into the bottom of a deep-dish pie pan ( I use a small square metal pan). Set aside.
Pour 2 oz of cheddar cheese on turkey "crust".
Combine Mayo and Eggs in mixer bowl and whip well. Pour mixture over turkey/cheese "crust".
Pour the remaining 2 oz of cheddar cheese on egg mixture.

Bake 40-45 minutes until top is browned and "set".
Cool 15-20 minutes before slicing.
This can be packaged in Ziplocs or plastic containers for meals quickly microwaved over the next 3-5 days. (Does not freeze well, though.)
