R.O.D.-Moroccan Chicken & Garbanzos
I got this from a "Bush's" beans advertisement in a magazine. I think it sounds really yummy! I can't wait to try it. It would probably work well with other meats too...pork tenderloin, beef, even shrimp? Moroccan Chicken & Garbanzos 1 Tbsp. ground cumin
2 tsp. ground coriander
1 tsp. chili powder
1 tsp. salt, divided
1 lbs. chicken thigh meat, cut in 1 inch cubes
¼ c. olive oil, divided
4 cloves garlic, minced or thinly sliced
¼ c lemon juice
Lemon peel of 2 lemons, finely grated
¼ tsp. ground pepper
2 cans (16 oz) garbanzo beans, rinsed and drained
3 scallions, thinly sliced
1 red pepper, sliced
¼ c parsley
Non-fat plain yogurt
6 onion or plain pita pockets (for your family)
Combine cumin, coriander, chili powder and ½ tsp. salt in plastic bag. Add chicken and shake to coat.
Heat 1 Tbsp. olive oil in pan. Add garlic and sauté’ until golden, about 2 minutes.
Transfer garlic to small mixing bowl.
Add chicken to sauté’ pan and sauté’ until cooked through, about 5-6 minutes.
Transfer chicken to large mixing bowl.
In the small bowl with the garlic, add lemon peel, lemon juice and remaining salt and pepper. Drizzle the remaining 3 Tbsp. olive oil in a stream and whisk to combine.
Add beans, scallions and peppers to the chicken. Stir in dressing to combine. Mix in parsley.
Serve with a topping of yogurt (in a bowl) or in pita pockets for your family.
