I have a lot to do tomorrow and may or may not make it on here, so here is the recipe that I promised to Monica.  I made this and it was pretty good, although I have never had the original from Olive Garden for comparison. Zuppa Tuscana 2 heads cauliflower ****(original called for 2.5 lbs thinly sliced red potatoes, I put in about 2 red potatoes, thinly sliced to help with the thickening) 1 to 1.5 lg onions thinly sliced 1.5 to 2 lbs Italian sausage, browned and drained of grease red pepper flakes 1.2 tsp chili powder  (or more, to taste) 1-2 cloves minced garlic salt & pepper ¼ to 1.5 lb of bacon, fried to very crispy, drained, patted w/ paper towel and crumbled

 

Water to cover and ¼ c chicken base

 

1 pint heavy whipping cream

 

Fresh Kale Cover first 8 ingredients w/ water & chicken base.  Bring to boil until potatoes and onions are soft. Add 1 qt heavy whipping cream, allow to come to boil.

 

Turn heat down to simmer for a bit A few minutes before finished, add fresh kale, destemmed and roughly chopped.
