R.O.D.-Cheesy Egg & Ham Bake
In honor of Monica being graduated to soft foods, here is something that sounds really yummy.
I got the inspiration for this from a recipe on Bariatric Eating:
CHEESY EGG & HAM BAKE 6 eggs, beaten 1/4 cup flour 1 teaspoon baking powder 1/8 teaspoon salt 1/8 teaspoon pepper 1/2 teaspoon Italian seasoning 1 cup milk 1 cup cottage cheese 4 ounces cream cheese cubed 1 cup cubed sharp cheddar 1/2 cup ham, diced In a large bowl, beat the eggs until frothy. Whisk in flour, baking powder, salt, pepper, seasoning, milk, and cottage cheese. Stir in cubed cheeses and ham. Pour into greased 9x9 inch pan. Bake at 350 degrees for 30-35 minutes or until puffed, golden and set. Makes ten servings. Per Serving: 179 Cal; 16 g Protein; 12 g Tot Fat; 11 g Carb; 5 g Fiber; 2 g Sugar; 350 mg Sodium
