R.O.D.-Minute Muffins
There has been quite a bit of conversation on the Yahoo Graduates board about these. I have not tried them yet, but I will as soon as I remember to grind some Flax Seed.
Minute Muffins
Take the small mixer cup that came with the Magic Bullet and add:
1/4 cup flax meal (use the "bullet" to grind 1/2 c. of flax seeds)
1/2 tsp. baking powder
1 or 2 packets of splenda (and/or a shot of SF cinnamon syrup)
1 teas cinnamon
1 large egg
Mix in the Bullet for about 5 seconds (make sure well blended)
Microwave for 1 minute! (in the same cup)
If you want you can add 2 T of cream cheese to the mixture (it manages to
stay in the muffin and ooze out when you eat it!)
While warm spread with some butter, cream cheese or SF jelly (watch the
carbs in the jelly)
1.5 net carb.
They say that these are only good fresh, eaten warm. They say that if they sit too long, they get kind of dry and icky. That is the beauty of making just one at at time. If you do not have a Magic Bullet, a blender will work; or even just mix it really good by hand, then cook in microwave in a small ramikin.
Here is a similar one with added protein that you can bake in the oven, 6 at a time.
Flax Seed Muffins
1/4 cup flax seed-grind-should make 1/2 cup ground
1/4 cup protein powder
1/4 cup wheat germ
1 teaspoon ground cinnamon
2 tablespoons oil
1/4 cup Splenda
1 egg
1 teaspoon baking powder
1/2 cup water
2 ounces chopped nuts-optional
Mix all ingredience and let sit for a few minutes to thicken if
necessary. Spoon into 6 non-stick muffin tins (use Pam, not paper
liners). Bake 25-30 minutes at 350 degrees.
