R.O.D.-Blue Cheese Soup
Hi everyone! I decided to name the recipe so that if you have to go back through posts, it will be easier to find what you are looking for.
This recipe is my version of the Cream of Blue Cheese Soup that is served at the DeSoto Hotel in Galena, IL. I can't always get to Galena and the soup is expensive, so I came up with this:
1 sm. onion--finely diced
1 Tbs. minced garlic
1/2 c. thinly sliced baby carrots
2 Tbs. Butter
2 Tbs bacon grease (or olive oil)
Saute these together until veggies are almost soft.
Add 4 small red potatoes--peeled and finely diced to the pan and continue to coo****il all veggies are soft.
Add 32 oz. chicken stock/broth
Simmer 1 hour.
Puree broth & veggies. Return to pan, cook on medium/low. (my stove is a 4).
Add 4 oz. low fat cream cheese
and 8 oz. crumbled blue cheese
Whisk while heating to melt cheeses.
Add 2 c. half & half.
Thicken with roux of 4 tbs. butter & 4 Tbs. flour
Enjoy this with a nice green salad, if you are at that stage.
