Recipe of the day-Granola

Good morning Illinois! Sorry I missed yesterday, but if you made it to the party, I brought some.  I will post the ones from the party later in the week. Lisa, you gave me this idea, as you mentioned granola: Sugar-Free Oatmeal Almond Granola 1 large egg 4 Tbs (1/2 a stick) of butter-melted 1 tsp. vanilla 1/2 tsp. ground cinnamon 1/2 Nature Sweet sugar replacement OR Splenda 1 1/4 rolled oats  NOT instant or quick cooking 3/4 c sliced almonds vegetable oil cooking spray Preheat oven to 350 and line baking sheet with parchment paper or a silicone liner.  This is VERY importatnt, because with out a liner (foil might even work), the mixture will adhere to the pan. Whisk together egg, butter, vanilla, cinnamon and suger replacement until smooth.   Add the oatmeal and almonds, mix well to coat. Press the mixture into a thin, solid layer on the prepared baking sheet. Bake for 12 to 14 minutes, until golden. Cool and then break into bite size pieces. Store in an airtight container or resealable plastic bag. You could always substitue other nuts, or a mixture of your favorite nuts.  Be creative!

Let's see if I can copy and paste the recipe here that you are asking for. I will put a picture of the tomato spread on my profile so you know what we use. We buy it at Dominicks or Jewel.

BEEF and SUN-DRIED TOMATO ROLL-UPS 1/2 LB. thinly sliced roast beef (from deli) 1/2 cup light cream cheese with roasted garlic (from 8 oz tub) softened (we just put minced garlic in the cream cheese because we have never found cream cheese with garlic in it) 1/2 cup purchased oil-packed sun dried tomato spread Spread each slice of beef with cream cheese. Carefully spread each with sun-dried tomato spread. Roll up each slice tightly; place on cookie sheet. Cover; refrigerate at least 1 hour our until firm. To serve, cut each roll into 4 pieces. Secure each with ****tail toothpick.

This roast beef for this recipe must be thinly sliced, not shaved, or it will not roll properly. For best results, explain to the person slicing meats at the deli counter how you will be using the beef.

Sun-dried tomato spread is also tasty on sandwiches, or served as an appetizer with crackers and flatbread.

Look for jars of the spread next to the sun-dried tomatoes in the grocery store.

Make it special

Secure each roll with a frilly toothpick. Arrange the rolls on a decorative platter and surround them with fresh greens.

Here is the deviled eggs recipe. I cannot take credit for this as it came from Bariatric Innovations Cookbook. We had it at our Nov. support group and our dietician approved the recipe.    Chicken Deviled Eggs

 

6 hard cooked eggs        ½ c finely diced, cooked chicken 3T light mayonnaise        1T onion, grated 1t Dijon mustard              ½ t dry mustard1T parsley, minced

 

 Directions: Cut eggs lengthwise in half. Remove yolks and place in a small bowl. Mash yolks with a fork. Add chicken, mayonnaise, onion, Dijon mustard, dry mustard and parsley. Blend well. Stuff egg whites with yolk mixture. Sprinkle tops with paprika to garnish.

 

Nutrition: Number of servings: 6, Portion size: 1 whole egg or 2 halves     Calories: 164, Protein 12g, Carbohydrates: 1g, Fat: 6g
