Sunday Roll Call
Good Sunday morning everyone. It looks like it is going to be a beautiful day. Yesterday was the highlight of my week. It was so great to meet everyone. For those who couldn't make it, you were missed. I really look forward to the next one.
Today, I am trying to clean out the fridge. Every since surgery food just seems to accumulate in the fridge. Even with my veggie spill last night at the party, I still have tons left over. I think I will take it to work tomorrow and treat my coworkers.
This week is going to be busy preparing for Easter next Sunday. My husband is Greek so we always celebrate both Easters. We don't really do much for the religous side of Orthodox, but we really get into the food and traditions of it. I would like to start on my cookies today. Nothing sugar free here, so I'll have to bake them and put them out of site. Tuesday, I'll start on my spinach pie. Depending on my energy level, later in the week maybe pastitsio (greek lasagna). I'm sorry for the loss of your father. Its hard to get or keep families together for the holidays when we start losing people. I don't mind sharing my recipies, but their not wls friendly. I haven't begun to try to adapt them. For me, I will probably concentrate on the lamb this year and some spinach pie since spinach has iron in it. I do want to try to make braised lamb as I think it would be easier to get down, although I've never made it before. How about I just pm you some recipies?

Hey everyone.
Late checking in I know, but with such a beautiful day I had to get out.
The kids and I got up and went to the early service at church today. After, our neighbor took my girls to their house to play while his wife and I went power shopping at Penny's. It was a blast! I got a new pair of jeans for $6 and a couple new pants and shirts.
I had to try them on!!!!! Oh the joy of shopping. LOL
Then we came home and the girls played in the sprinkler and I cut the grass (huge NSV).
Now it's off to baths and showers. Then my daughter's coral reef project and dinner.
