Citrus and Black Bean Salad
Serves: 4
Orange and grapefruit add flavor and vitamin-C to this fiber-rich bean salad.
INGREDIENTS
1 grapefruit, peeled and sectioned
2 oranges, peeled and sectioned
1 (16 oz.) can of black beans, drained and rinsed
1/2 cup red onion, chopped
1/2 avocado, sliced
2 tablespoons lemon juice
Black pepper to taste
DIRECTIONS
1. Combine all ingredients.
2. Serve at room temperature.
