Today, we have a 4 in 1 recipe! Chicken Thighs---4 Ways.

Chicken thighs work better than breasts as they do not dry out as much.

1 package of boneless/skinless chicken thighs (approx 5-6 thighs) Brown thighs in a skillet coated with Pam, skillet needs to have a cover. Add 8-10 oz. of chicken broth or 1 c of wine and your choice of the following: 1.)  Taco seasoning and one can of black or kidney beans (for this style just use an entire can of chicken broth and reduce at the end to the consistency you like.) Note: Once the chicken is done I take 1/2 the beans out and smash them up and put them back in. I serve with salsa, FF sour cream and FF cheddar cheese. Yummy! OR 2.)  White chilli seasoning and one can of great northern beans, put 1/2 of the beans in a blender first then add with remaining beans to chicken I use the chicken broth with roasted veggies.

OR 3.)  Fajitas seasoning. With the fajita chicken I saute onions and peppers and add them at the very end. Serve with Salsa, FF sour cream and FF cheddar OR 4.)  1/4 c hot sauce. With the hot sauce chicken I add 1/4 c more hot sauce at the end. Cover and let simmer on low for 45-60 minutes until the chicken falls apart. Shred chicken with fork. Don't open the lid often you will dry out the chicken. When it shreds easily its done.

Protein Balls:  2 Cups Peanut Butter 1 Cup Oatmeal (the big old fashioned oats--NOT Instant)  1 Cup Protein powder-vanilla or chocolate (one that you like)  3/4 cup Splenda

Warm peanut butter in microwave for 40 seconds, add everything else and mix well.

Roll into walnut sz balls. you can either refrigerate or put in tupperware sealed container Each ball is 10-12 g of protein.

thanks Dawn they sound very good,

      Success begins with wise choices I make,I will not let noncompliance be my mistake, The surgery I had was to assist me in changes. My compliance is for a success long range, So I will think before I decide to cheat. Remember the goals I want to meet. both sound yummy! May I ask what is the best type of peanut butter for the PB balls? I'm making the chicken this week. I think my kids will love it too!! Thanks for sharing!

The recipe had a comment on it that Skippy and Jif work best.   I have not made them yet.  Let me know how they turn out if you do.

Thanks! I will definately let you know. I had a different recipe for these and they were pretty good. Well, I think I got one out of all because my kids and hubby went nuts. These sound so much better though. I think I may need to hit the grocery store for some oatmeal after I drop the kiddies off at school! :)
