Egg Plant?

Any ideas on cooking egg plant?

I love eggplant but still make it the fattening way and only eat a small amount, dreged in flower, fried in a mixture of butter & oil & eggplant tends to absorb it. Then I put it in a casserole & pour on spaghetti sauce & parmesan cheese & bake until done. Good with chicken breasts in it too or ground beef I did read somewhere that you can slice it & oven fry it in just a bit of oil. That would cut back on the fat. Dixie

Hey Janelle I'm with Dixie, except I do mine in flour, beaten egg, and a few cracker crumbs. But I don't eat much of it at one sitting. It is also good 'stewed' with tomatoes and onion. My mom makes it that way and then freezes it. I work with a guy who doesn't really care for egg plant, but he cubes his and puts it in beef stew. He usually does it in a crock pot, but adds the egg plant about an hour before they eat, so it doesn't turn to mush. Says it taste prettty good. enjoy Sheila
