Splenda for Jam/Jelly
Thanks to all for your responses. And thanks to your help I did do some looking at the Splenda website and this is what I found.
Yes... you can use it for jams/jellys. They even have a strawberry jam recipe on the site.

There is more technical info the after the recipe. But basically it says that Spenda is heat stable/ just be sure that you are using proper preserving techniques.
