homemade protein bars
I just got the book "500 Low-Carb Recipes" and made a batch of peanut butter protein bars. They're pretty good and loaded with protein.
Mash together 1/2 stick melted butter, 1/2 peanut butter (crunchy is best), and 1/2 c. softened cream cheese. Add 1 3/4 c. vanilla protein powder, 1 T. vanilla, 2 T. Splenda, and 1/2 cup chopped peanuts. It will be crumbly. Press firmly (really!) into 8"x8" pan and freeze. Cut into 12 bars.
There is over 30 grams of protein per bar. Even though they look small, I can hardly finish one. After slicing, put in little bags and keep frozen. Otherwise they crumble very easily. Handy for eating at my desk at work but can be a little messy.
I was asked what my usual menu for a day is (Just over 3 months out):
Breakfast (at work) - one of the above or cheese cubes (and a protein drink before leaving the house)
Lunch - chili or tuna salad, both with crackers
Afternoon snack - glass of skim milk
Supper - usually chicken and some veggies and/or fruit if there is room
Evening snack - sunflower seeds in the shell, nuts, or popcorn
So what does a normal day look like for you?
You can buy protein powders at the grocery store like Hy-Vee by the vitamins. You can buy it places like GNC or health food stores or get in online like vitalady.com. You sort of have to find out what kind you personally like. I get the whey stack product. Since this recipe calls for the powder to be mixed with other dry and wet ingredients, the overall taste is not as important as if you were going to drink it straight. If you liked the bars, probably a more inexpensive powder would do.
