Mandarin - Cottage Cheese Salad by JoAnna Lund. 3/4 cup Plain yogurt (Lite 85 or Yolite), 2/3 cup Carnation Nonfat Dry milk powder, 1 teaspoon coconut extract, 2 cups fat free cottage cheese, 1- 8 oz can crushed pineapple, drained
1 - 11 oz can mandarin oranges rinsed and drained, 1 cup cool whip lite, 1 - 4 serving pkg. Jell-o sugar free orange gelatin. In a large bowl, combine yogurt and milk powder. Stir in extract and cottage cheese. Add pineapple, oranges, and cool whip lite. Sprinkle dry gelatin over top, gently stir to combine. Cover and cool 4 to 6 hours. Serves 8 3/4 cup. 103 calories. 1 gm fat. 8 gm protien. 16 gm carb. 183 gm sodium. 0 fiber.
