I'm not allergic to these foods but since surgery have become very lactose intolerant, something that is very common post-surgery.
Are you sure you are actually allergic to the foods? Have you been tested? The reason I ask  is that for several years I thought I was allergic to some foods (eggs & whey proteins) & when tested it turned out that I was just sensitive to them and was able eventually to eat them. Well, I'm still scared of whey protein in shakes.
If you are allergic to milk & soy, you will need help getting in enouigh protein after surgery. However, most of the bariatric programs employ a dietician & I'm sure he/she will be able to work something out for you. I see that you are from Waterloo. If you are looking at going to Dr Glas**** in CF, his dietician, Lois, is really very helpful. I'm sure you can call there & arrange to speak to her, even before having surgery, to get her input.

Wow, I feel for you.  My concern is just dealing with my insurance company!
What surgeons have you seen?  Have you been to Des Moines Bariatrics yet? (Drs. Eibes and LaMasters).

Are you completely set on getting a bypass?  What about going the LapBand route?  You wouldn't have as many issues related to foods with that.  Just a thought!
