yummmmmmy! Try this!!
Hi all, I am three months out, and just tried this recipe. I have used it pre op, but had to modify it. I will post both of them...
Turkey Enchildas
1 lb ground turkey or chicken breast
2 cups salsa
1 block of cream cheese (fat free or low fat)
1 10 oz box frozen spinach (thaw, and squeeze all water out)
1 can enchilda sauce (optional)
grated cheese
1 pack wheat, corn or flour tortillas
brown turkey
add block of cheese, and drained spinach. Mix well over low heat until blended and creamy. Add one cup of the salsa. Fill tortillas with this mixture, place seam side down into dish. Cover with remaining cup of salsa, and can of enchilda sauce (if wanted). Top with cheese...maybe some black olives..etc. Cover with foil and bake at 325 for about 20 to 30 mins.
Modified for new pouches:
Brown turkey with about 2 tablespoons of extra virgin olive oil. Cool, and crumble well. (I just sorta rubbed between my fingers). Then add 1 cup mild salsa, cream cheese, and spinach. Simmer over low heat until blended well. Then add the can of enchilda sauce to the mix. Serve your portion covered with cheese, and sour cream if tolerable.
I had to moderate this because my pouch has a hard time with chicken or turkey, but I can do this. Don't know the protein grams, but it should be high!
