Non-starch veggies

I posted this on the RNY board but want you all to give me so idea too.


Hello OH family.
Part of my pre-op diet consist of non-starch vegetables (no potatoes, bean or corn). Can you give me some suggestion of what vegetables to eat other than green beans and greens?
If I eat a plan green salad what kind of dressing can I use?

I love Squash!  Yellow or Zuchini,,,,,,,,sautee with a little onion in olive oil, a little salt and pepper and a couple of packs of Truvia,,,,,,,,mmmmmm mmmmmmm!!  Also the Steamables in the freezer section at the grocery store are great,,,,,Grren Giant I think.

Anything green is safe.  Also onions, mushrooms, peppers.  Try something new, since you have to suffr through this, like a new mushroom, spaghetti, squash, grilled asparagus, fennel, leeks. At least make it a little exciting.

Ranch dressing is low carb, but high fat. Low cal Italian or any vinagrette will be safest bet. You just have to read the labels.  Thousand Island, honey mustard or French is a no no.

I make a homemade dressing w/ redwine vinegar,  italian seasoning , salt, pepper, and a tiny bit of olive oil.   You can control how much oil.  Can also dilute w/ a tiny bit of water.   It is simlpe and tastes kinda like Olive Garden's dressing. Very cheap to make, you only need a dash of  italian seasoning and a drop of oil.  It keeps in the fridge for a week or 2.


You can also do any flavor of Mrs Dash w/ vinegar and a bit of oil.

Also try those dry dressing mixes like Hiddden Valley and Knoor's. You can control how much fat you put in them by using low cal sour cream or skim milk.

I'm low carbing too. It ain't fun!!!!!


You can check out the South Beach Diet book from the library for some ideas, or google low carb foods.

You both are wonderful, those things I have never thought of, I am already tired of cauliflower, green bean, and greens. tonight I am going to fix kayle in some chicken broth (I sure hope it taste good). LOL

The Birds Eye Steamfresh veges are great and they keep their color, flavor, and crispness. They taste very fresh. I love the one with broc, calif, carrots, pea pods, and water chestnuts. They say 6 grams of carbs but if you pick out the carrots or maybe the peas I am sure it would be less. I also love the frozen asparagus from Trader Joe's it's surprisingly cheap. I usually roast it in the oven. Good luck! Buffy

Walden Farms calorie free/ sugar free dressings and sauces and dips in the diet or produce (salad) sections of the supermarket. 

Also try the fresh veggies in the microwave bags.  They have brocoli, broccoli slaw, cauliflower, mixed veggies, shredded cabbage all good raw or cooked.  Microwave then season with dried seasonings oil spray, or if ok tbsp or less of smart balance or olive oil when hot.  Or, cook one or all, onions shallots garlic and throw in veg when tender and cook on low till steamed to desired tenderness.  Use no stick spray or smart balance or olive oil, tbsp or less if allowed.

Well I have found the answer that you have been looking for: NONSTARCHY VEGETABLES.

Artichoke, Asparagus, Geen beans, Wax Beans, Broccoli, Brussels Sprouts, Carrots, Cauliflower, Collard Greens, Cuccumber, Egg Plant,
Green Onion/Scallion, Iceburg Lettuce, Leeks, Mushrooms, Peppers, Red Leaf Lettuce, Spinach, Summer Squash, Tomato, Zucchini.

These all have only 25 calories and 5 Carbs.
