Best Ever Chicken Casserole

 Hi All I said I would post this recipe at the OH meet & greet. So here it is.

INGREDIENTS 

  • 4 skinless, boneless chicken breasts (about 2 1/2 cups)
  • 1 (8 ounce) can water chestnuts chopped
  • 1 (10.75 ounce) can condensed cream of chicken soup
  • 1 cup cornflakes cereal crumbs (or regular bread crumbs)
  • 1 cup mayonnaise (reduced mayo if desired)
  • 1/2 cup celery


    DIRECTIONS
  1. Preheat oven to 350 degrees F (175 degrees C).
  2. In a large pot, boil the chicken until tender. Cut the breasts into cubes or small pieces.
  3. In a large bowl, combine the chicken pieces with the water chestnuts,  soup, half of the crushed corn flakes and mayonnaise. Mix well.
  4. Pour mixture into a 9x13 inch baking dish. Sprinkle the rest of the crushed corn flakes on top of the mixture. Bake in the preheated oven for 1 hour.
I usually double this recipe. I use 1 can cream of mushroom as well as the cream of chicken. I also use dark & white meat.

I took the nutrition content from a recipe similar to mine. It must have been way off. I looked up the contents of the highest fat parts and it doesnt seem like it should be that high.
I sometimes use low fat mayo and reduce it to 1/2 or 3/4 cup.
Bread crumbs are 1g fat.

Thanks Ginger! Its a favorite in my house. And always a big hit at pot lucks. The first time I had it was 25 years ago. I was visiting family in New Jersey and someone made it. I went crazy over it and asked for the recipe. I've been making it ever since.
