Cooking Tip...Try using a Butternut Squash instead of potatoes

I don't eat bread, potatoes, rice, pasta or sugar.  So I am always trying to come up with different things to put in my recipes.  This week I cooked a pot roast in the oven, I put carrots, onions, mushrooms, and in place of potatoes I used butternut squash.  (It has the same texture as a potato but it tastes a little sweet).  I also put Campbell's soup health request cream of mushroom soup and a package of Lipton (dry) onion soup/dip.  It was so good.  My boyfriend who does eat potatoes didn't even notice the difference. 

Try it, you may like it.

You are much stronger than I am. I eat all of that stuff but only in limitation!   WEll no sugar.   The butternut squash sounds yummy!  I'll have to give that a try.  By the way where the heck have you been lately??  Ive missed seeing you around!!

Hi Ginger,

I have not had those things in 8 years...don't even miss it!!!  Yeah, try it...it was really good!!

I have been so busy at work on different projects.  I have not posted.  I do read the message board almost every day, I just don't post......I don't know if you saw it but I was in the AJC, living section last Wed.  It turned out really good, I am proud of it.

Well, have a wonderful day and try to keep dry!  I hope to see you at support group soon.

Years ago, when I actually stayed on a diet for 14 months, I learned to eat all kinds of squash.  I love butternut squash, just by itself.  Have you tried spaghetti squash?  I truly like it as well as pasta!  Of course you can't beat yellow squash, zucchini and onions sauteed!

Yes, I have tried spaghetti Squa**** was very good.  I do love all kinds of squash too.  And there are so many ways to cook it.

I also have a spirooli (as seen on TV!) and I like to make "noodles" out of zuccini.

Also - If you take the zucc noodles and mix with lemon pepper (and even I Cant Believe its a Petroleum Product) and then cook them in a pile on the George Foreman Grill for, say 10 minutes, until its a crispy patty - its just like has browns!!
