New Sweet Potato Recipe
Hi everyone,
I found this recipe, tried it and thought I'd share it with you. If you like sweet potatoes you will probably like this. I'm going to use it as a new way to serve sweet potatoes at Thanksgiving. Enjoy!

Sweet Potato Pudding
Ingredients:
3-4 large sweet potatoes
1/4 cup fresh-squeezed orange juice
1 teaspoon cinnamon
1/2 teaspoon nutmeg
slices of oranges (or other citrus fruit) for garnish
Directions:
1.Individually wrap sweet potatoes in heavy-duty aluminum foil.
2.Bake at 350 for 3 hours. This will caramelize the pulp giving it a smooth, sweet flavor.
3.Cool the potatoes overnight in refrigerator.
4.Remove foil and skins (they should fall off) and put pulp in food processor. Add juice, cinnamon, and nutmeg and blend for 8-10 minutes until pudding is light and fluffy.
5.Chill and serve in individual dessert dishes garnished with fruit, or a dolup of sf cool whip

It really is pretty good. And pretty easy to make too.
What do you mean, trying to buy potatoes to put up in the freezer?
Are you talking about sweet or white potatoes?
While visiting with my parents in California a few years ago I fixed both kinds of potatoes and put them in their freezer so they could have them after I left. How do you fix yours?
