CORNBREAD SALAD? WHO KNEW
This is the most unusual recipe in my holiday arsenal. I love it. You won't believe how good this is. You can use low fat mayo if you want...but I use the 'real' thing. I love Hellman's. I don't eat enough to worry about it.
CHARLIE'S CORNBREAD SALAD
1 6 oz pkg Martha White Cornbread mix....bake per pkg directions and cool
3 cups chopped tomatos (I peel and seed them but you don't have to)
1 cup chopped green pepper
1 cup chopped onion
1 lb bacon fried crisp and crumbled
1/2 cup SF sweet pickle relish (drain and reserve juice for sauce)
(look for Mt. Olive sugar free pickle relish...look for the blue label)
Sauce
1 cup mayonnaise
1/4 cup pickle relish juice
Assemble
1/2 sauce
1/2 veggie mixture
1/2 crumbled cornbread
Repeat
Cover and chill 4 hours or overnight.
This is a colorful and tasty salad....great for the 4th. And when people ask you what it is....they always look at you funny......
