A quick and easy recipe. Vickie J. Cashew Chicken Spread Makes: 10 (1 oz.) servings 2 cans (4.25 oz.) Underwood Chicken Spread (White Meat) 1/2 Cup chopped cashews 2 Tbs. mayonnaise (low-calorie) 2 Tbs. chopped green onion 1 Tbs. Dijon-style mustard 1 tsp. honey In a medium bowl, combine all ingredients. Chill, covered for about 30 minutes. Makes about 1.25 cups Serve on crackers or as a sandwich spread on bread or pita with lettuce and sliced tomatoes. For a different taste, try substituting pecans for cashews. Nutrition per 1 oz. serving: Calories: 104. Total Fat: 7.33 Cholesterol: 15.8 Sodium: 294.83 Potassium: 39.85 Total Carb: 4.75 Fiber: .539 Protein: 5.2
