LOL, hmmm Kissimmee is in the heart of all the tourist traps, I am sure you can find SOMETHING to entertain yourself! If you can, go to downtown Celebration and eat at The Columbia restaurant, one of my favorites.
I all seriousness there are plenty of things to do in Kissimmee -- other than Disney. There is shopping for one. Loads and loads of outlet malls. Lots of restaurants. There is the Tupperware Museum (if it is still open).
