Creamy Baked Apples Serves 2 2 baking apples (5 ounces each) ½ teaspoon lemon juice ½ cup cranberries, coarsely chopped 2 tablespoons ricotta cheese 1/8 teaspoon cinnamon 1/8 teaspoon grated nutmeg 4 tablespoons water Low-calorie sweetener as desired Core apples and peel on top to a 2-inch diameter. Rub inside and top of apples with lemon juice. Combine remaining ingredients and stuff into apples. Put apples into crimped foil cups and place in water in a baking dish. Bake at 375 for 35 minutes. Sprinkle with low-calorie sweetener and more nutmeg if you wish. Hey Phoenix: Thanks for all of the food tips. Will you be at the WISH Center holiday party the 2nd Thursday of December? It is the support group for the pre and post ops but we are all bringing a healthy dish too, and you would bring a gr8 one! Hope to meet you there.. Tina
