Hey again! I made up a delicious recipe last night, so I thought I'd share: Salmon Pasta Salad Ingredients: *2 tsp minced garlic *Salmon fillet (size approriate to your family) *1 tbsp olive oil *1/2 cup balsamic vinegarette dressing(I use Newman's Own) *Mueller's Reduced Carb Penne Rigate pasta shells *cracked black pepper (I use McCormick spices) *Baby spinach leaves *Lemon juice *Pam Butter Spray Directions: Preheat oven to 350. Take a baking pan and spray a little Pam butter spray where the salmon will be placed. Then rinse the salmon with cold water, pat dry and place in the pan. Sprinkle the minced garlic over the salmon, then the lemon juice (to taste), olive oil, and cracked black pepper. Bake for 30-45 minutes ****il fish flakes). Boil Mueller's pasta until tender. Drain pasta and rinse with cold water. Take the baby spinach leaves and chop into little pieces, discarding the stems. Mix pasta and leaves with balsamic dressing. Serve salmon over the pasta mixture. This dish is easy and great hot or cold--perfect for quick leftovers!!! -Phoenix

I make something similar, it is very good. When I have left overs, I cut them in small pieces (minus the pasta), add 1 tbsp of chopped walnuts, 1 tbsp. of light cream cheese (or 1/2 tbsp. of fat low carb mayo), and serve it with wheat crakers. -Flávia (doing no work today)!!!
