I'm so sorry you went through all this but it sounds like you have made a huge impact on others' lives for the good. I'm so glad you're hooking back in here too, we need you.
Looking at your labs I think you will want to continue to focus on protein. The albumin is quite low. Maybe more eggs in your diet will help. I like protein shakes, so I drink a lot of those, or I do when I'm doing what I'm supposed to.
You might also want to work on the iron markers hemoglobin and hematocrit are a little low. So, pork and beef are good for iron. A good supplement is Proferrin, which is a heme iron and you might be able to get a prescription for it.
In addition to getting the right dry vitamin D3 you might want to see if you can get a PTH (parathyroid) lab done and a bone density scan requested by the doc. It sounds like you might have slipped into osteoporosis. I have osteoporosis and had osteopenia pre-DS. They put me on oral meds for that but the injectable meds they use now are much better for us.
Your liver enzymes (AST and ALT) are great! I wish mine were that low.
