Found a recipe for this on the foodnetwork.com web site, under Paula Deen. It was low carb - DS friendly. It had a cup of sour cream, a cup of cheese, a cup of mayo - cause everything she cooks has mayo and butter in it. It also uses a cup of cream of mushroom soup - but you can make your own alfredo sauce with cream instead (which would taste better).
I changed up a few things like no bread crumbs, and added some spices. And I roasted my veggies in olive oil first before putting the casserole together.
It's perfect for white meat, like chicken breast or turkey breast. And I hate white meat - but now I know what to do with it.
I have created a huge cookbook of recipes on my computer lately. Just shopped around all the food blogs, foodnetwork sites, etc. while I watched TV at night.
I just started looking at casseroles, or low cost meals/one pot wonders, and remaking them into low carb/cheap meals. Of course, having to feed only myself and dog, these meals tend to make tons of meals that end up in the freezer, which is handy.
I have to admit, I look at Paula Deen recipes more now - and cut out all the flour/taters/rice/bread crumbs you find in southern cooking - because she uses so much fat in her cooking. Before the DS, when I was watching every calorie, I would gain weight just reading her recipes.
I'm tickled pink that I get to eat so much fat - and that I am encouraged to do so. It's like a dream come true....

I find white meat to be dry, devoid of flavor - just a waste land of nothingness. And it's the most expensive thing on the bird (which I don't get - they should give these away).
Although, I do have a recipe where I cut up and chicken breast into strips (make chicken tenders out of it), put a bunch of seasonings on them, dip in beaten egg, then roll in crushed corn flakes (or corn flakes and coconut flakes). Then bake on a cookie sheet. Now these things are good. I can pair them with ranch dressing, or blue cheese dressing, etc.
