Less than 5 minutes for the tummy and 1-2 hours for the guts. What I really reacted to was any sugar alcohols, or sugar free products.

Not much bothers my stomach these days... but if I eat carbs or sugar, I will get signals 1 to 1.5 hours later that there is going to be a blow out.
In the early days, my stomach was very sensitive. If I ate anything oily, it came back up within 7 minutes. It only takes 5 to 8 minutes for food to hit your stomach.
I do remember having the same symptoms and trying to figure out why I was having diarrhea today when I have been eating the same well tolerated foods for the past 2 days. And trying to find a link as to why this would come and go. I found out that what I ate today can affect the BMs of food I ate 2 days ago (like sugar). And if I forget to take my vitamins for a day, I will get diarrhea in the mornings that are not related to any food intake. It's all a balancing act. But it did smooth out as time went on.
I suspect gas can be 20 minutes or less - could be coincidence, but it nearly always coincides.
BMs can be 3 or 4 hours for me, or often they cause me issues during the night. I get away with most stuff during the day and have plenty of bathroom trips when I'd really rather be sleeping!! :-S I guess dietary indiscretions tend to happen in the afternoon/evening.
