Argh, it snowed again today. OK, nothing settled, but seriously when's it gonna stop!! :-S

* My PB cookies are now more rock cake shaped, which works well for me as I can cook 'em a little moister in the middle.

I my DS
2 large eggs
1 teaspoon of bicarbonate of soda (baking soda in the US)
2 and a bit tablespoons of almond meal/flour
6 teaspoons of Splenda
1 cup SF peanut butter
Cinnamon (lots if you're like me)
Mix them together then wet your hands and roll them into balls and stick them on a cookie tray and cook at 160C/320F for 10mins.

I worked it out to about 10g protein per cookie/rock cake. I get about 6-8 cookies/cakes per batch.

I got 7 cookies/cakes in my last batch, but the eggs must've been small as I think it'd have been better with a 3rd egg (it came out a bit dry).
