I finally looked up this Julian bread and it looks like it's pretty darn good stuff...what with the 12g protein a slice. How does it taste? Texture?
How do you keep it? Freeze and toast?
ETA..and is it worth that kinda money?

Julian bread is very dense and is kinda like wheat bread on steroids. It tastes pretty okay but wouldn't win any awards when placed next to my personal fave, Milton's bread. However it does fit into a lower carb lifestyle and I know myself well enough that I need my bread fix from time to time. Plus you really can't make melty cheese on lettuce.
Yep, it does cost a pretty penny. I get mine at a local healthfood store. I believe it is $6.99 per loaf. I don't think I would buy it if I had to pay for shipping from the website.
I keep it in my freezer, then pull out a slice and toast as needed. The loaf usually has 12 - 14 slices, so it works out to around .50 per slice. You may be able to slice a regular slice in half (really thin!) to make a sandwich - I don't think I could eat one with 2 slices of Julian bread at one sitting. Just too heavy.
There is also a low carb pita available at Netrition. Joseph's flax seed pita, if I recall correctly. It is also pretty tasty for what it is - a low carb option. I bought multiple bags of them and have them stored in the freezer as well.

Good news...you don't have to wait 2 hours between batches, 1 hour is plenty.
